Nicaragua may not be the most famous coffee producer in Central America, but it has great potential. Since 2004, Enrique Ferrufino and his family have been running Finca Aurora, focusing on producing high-quality coffee through practices that respect the local ecosystem.
One of the varieties they grow is Villa Sarchi, a natural mutation of the Bourbon variety, originally discovered in Sarchi Village in Costa Rica. At Finca Aurora, right after picking, ripe cherries are floated and put into a tank with hibiscus kombucha and blended scoby. The team closely monitors pH, liquid temperature, and sugar level (brix) throughout the process. After fermentation, the coffee is dried on raised beds for 22 days and reposed for 11 weeks before hulling.
Finca Aurora is among the first farms in Nicaragua with a fully integrated coffee operation, maintaining complete control over quality from harvest to packaging. This coffee is Rainforest Alliance Certified, meaning that the coffee has been culitivated using methods that seek to maintain biodiversity and rich ecosystems.
