Our Roastery

Cafeistas is a Specialty project of Coffee Republic S.A., started in 2011.
We are the first coffee company in Greece that chose to roast coffee on a Loring roaster! It’s our choice to roast at the American-made Loring®, the most popular roasters in the global specialty coffee community, because of their unparalleled technology and quality of construction. They assure us the smallest possible ecological footprint, due to their patented convection in a single burner technology. They offer clean and sweet cup, making it practically impossible for defective flavors to occur during the roasting process. Also, they give us unparalleled control and absolute stability in the final product with hygiene and safety.
In our Roastery you will find the Loring S35 Kestrelâ„¢ and S70 Peregrineâ„¢.

Roasting process

Our coffee choices are biological-organic, single origin and single-estate coffees as well as rare micro lots from small coffee farmers around the world. They are carefully selected by us with emphasis on quality and traceability.
We roast coffee every day at our roastery and we recommend letting our coffees to rest for a few days before brewing. Due to the roasting technology, most coffees need more than 30 days post roasting to reach the optimal taste profile, “sweet point” as we used to say. This depends on the roasting, origin, processing, and other characteristics of the coffee beans.

Coffee Cupping

Cupping is a quality control process that we do weekly in our lab. We taste and evaluate our coffees to ensure that every roast has the right balance and flavor profiles and that it’s maintained through time.

 We roast and deliver our coffees to coffee shops, restaurants, bars, offices as well as to all the people who love to taste a good cup of coffee! If you are interested in spending a day in our roastery you can visit our coffee shop in the front of the production area where, from a large glass window, you can see everything and enjoy your coffee or buy coffee beans, etc. from our retail corner.
  Our Roastery, the Coffee Shop and our Offices are located at Ikonomidou 25, Peristeri, just 15 minutes walking distance from Agios Antonios metro station.
